Slow Cooker recipes are awesome. You put your cooker on, go to work and come home to your supper already done. Love it! Anything in the Slow Cooker is alright by me. So I try to make as many of these dishes as possible. This Jerk Chicken is so good, it just melts in your mouth.

Ingredients

3 medium
sweet potatoes, peeled and cut in cubes
1 can(s)
sliced water chestnuts, drained
1 c
dried cranberries
1/2 c
dried cherries
1 can(s)
pineapple tidbits, unsweetened
2 lb
chicken breast halves, skinned removed, bone in
1 tsp
cinnamon
2 Tbsp
caribbean jerk seasoning
1/4 c
minced onion
2 Tbsp
minced fresh gingeroot
2 Tbsp
worcestershire sauce
1 Tbsp
grated lime peel
1 tsp
cumin seeds, crushed
3
fresh thyme sprigs
1
fresh lime

Directions Step-By-Step

Place potatoes in a 4-5 qt. Slow cooker. Add water chestnuts,cranberries, and cherries. Drain pineapple and reserve juice. Add the drained pineapple.

Rub Chicken breasts with cinnamon & jerk. Put Chicken on top of fruit & potato mixture.

In a mixing bowl add reserved pineapple juice, onion, ginger,Worcestershire sauce, lime peel, crushed cumin seeds. Pour over chicken and top with fresh thyme sprigs.

Just before serving cook rice flavor of your choice. Serve with rice and squeeze the juice of a lemon over chicken.
