Slow cooker sandwich filling
|3 Tbsp||mrs. dash southwest chipotle seasoning blend|
|3 lb||chicken thighs, skinless and boneless|
|1 lg||red pepper-chopped|
|1/4 c||chicken stock (or beef stock if using beef)|
|1 (4oz) can(s)||green chilies or jalapeno peppers-chopped|

DirectionsSeason meat with seasoning blend. Place pepper and onion in slow cooker. Place meat on top. Mix stock and ketchup; pour over meat and vegetables.Cook on low setting 6 to 8 hours. Remove meat and shred. Place meat back into cooker. Add green chilies or jalapeno peppers and stir to mix. Serve on bun, in wrap, or etc.NOTE: I also like to use Mrs. Dash Fiesta Lime seasoning blend or you can use your favorite creole seasoning blend. Experiment and see how many great tasting seasoning combo you can come up with.
