Mexican and Tex-Mex are a family favorite. This one looked good enough to pinch from another website.

Suggest you adjust the seasonings to your personal preferences as to spiciness.

Ingredients

each green, red and yellow pepper, cut into strips
1 large
onion, cut into strips
2 lb
boneless beef sirloin, cut into strips
3/4 c
water
2 Tbsp
red wine vinegar
1 Tbsp
lime juice
1 tsp
ground cumin
1 tsp
chili powder
1/2 tsp
salt
1/2 tsp
garlic powder
1/2 tsp
pepper
1/2 tsp
cayenne pepper

8" flour tortillas, warmed
1/2 c
salsa
1/2 c
cheddar, shredded
1 1/8 tsp
fresh cilantro, minced

Directions Step-By-Step

Place peppers and onions in a 5-quart slow cooker; top with beef.

Combine water, vinegar, lime juice, and seasonings. Pour over meat.

Cover and cook on low for 8-9 hours or until tender.

Spoon onto tortillas and top with cheese, cilantro, salsa and any other of your favorite fajita toppings.
