This is a great for tacos or taco salad. I have also used this in enchiladas and quesadilla's It is easily multiplied for crowds. I've taken this to work and Packer parties. It's always a crowd pleaser!
1In a bowl, whisk together the chicken broth and taco seasoning. Place chicken in slow cooker. Pour broth and seasoning mixture over the chicken.
2Cook in crock pot 8-10 hours on low. Shred meat using forks
3I will often, simmer the broth that is left while I'm shredding the chicken to reduce and thicken it a bit. If you don't feel you have enough sauce, you can always add additional broth when simmering. I then place both back in the crock pot.
