Slow Cooker Chicken Pot Pie and biscuits

I often double or triple this recipe because you can do so much with the basic recipe.
such as.
1. Add a can of cream of mushroom soup and a can of cream of chicken soup to 2-3 cups of pot pie mixture for pot pie soup
2. pour mixture over white or brown rice
3. pour mixture over egg noodles
4. Make several pieces of toast. Butter one side and put pot pie mixture over the toast.
5. Buy ready made pie shell and pie crust( for the top) and make pot pies.
hmmmmmm, yum!

Slow Cooker Crock Pot

Ingredients

1-2 lb
chicken thighs, skinless and boneless
salt and pepper to taste
1 lb
red potatoes
1 medium
onion
2-3
carots, chopped/diced
1 can(s)
corn
1 can(s)
peas
2 stalk(s)
celery/ chopped
2 tsp
parsley

FOR THE SAUCE

3 Tbsp
butter
3 clove
garlic
1/2 c
all purpose flour
2 c
chicken stock
1/2 tsp
thyme, dried
1/4 tsp
oregano, dried
1 pinch
paprika
salt and pepper to taste
1/4 tsp
basil
can(s)
grands biscuits

Directions Step-By-Step

Start with making the sauce. Melt butter in a large saucepan. Add garlic and cook, stir frequently until it smells good, about a minute.

Gradually whisk in the chicken stock, thyme, basil, oregano, and paprika. Whisking constantly until the sauce begins to thicken, about 5 minutes. Salt and Pepper to taste.

Now, spray the inside of the slow cooker with nonstick spray

Season the chicken with salt and pepper and put on the bottom of the slow cooker. Add all the vegetables, and cover with the sauce. Cover and cook on low for 4 hours or on high for 2.

Once cooked remove each piece of chicken and shred or cut into cubes and return to the crock pot. And set it on warm.

Prepare the biscuits follow instructions on the package. Serve immediately.
