Skillet Cheesy Chicken & Rice

1 Tbsp
vegetable oil
1 1/4 lb
chicken breast halves, skinless and boneless
1 can(s)
cambell's condensed cream of chicken soup
1 1/2 c
1/2 tsp
onion powder
1/4 tsp
black pepper
1 c
long grain rice, uncooked
2 c
frozen mixed vegetables
1/2 c
shredded cheddar cheese


1Heat oil in 12" skillet over medium-high heat. Add chicken and cook 10 min. or until well browned on both sides. remove chicken from skillet.
2stir soup, water, onion powder, black pepper and rice in skillet and heat to a boil. reduce heat to low. cover and cook 15 min., stirring once halfway through cooking time.
3stir in vegetables. return chicken to skillet. sprinkle with cheese. cover and cook 5 min. or until chicken is cooked through and rice is tender.
