After trying many different Tetrazzini recipes and being disappointed, I decided to take some of the flavors I did like and create my own. Needless to say, I've already been informed not to ever change a thing. My search for Tetrazzini is over. Just awesome!

Ingredients For ~ sinfully good chicken tetrazzini ~ cassies

  • 12 oz
    prepared spaghetti, drain
  • 3 lg
    boneless, skinless chicken breast - grilled and cubed - or close to 4 cups
  • 1/2 c
    butter
  • 1 clove
    garlic, minced
  • 1 md
    onion, chopped
  • 1/4 tsp
    creole seasoning
  • 1/2 c
    flour
  • 2 1/2 c
    milk
  • 1 1/2 c
    heavy cream
  • 1/2 c
    dry white wine
  • 1/2 tsp
    pepper
  • 2 1/2 Tbsp
    better than bouillon, chicken base
  • 1 c
    shredded parmesan cheese
  • TOPPING
  • 2 c
    fresh bread crumbs - i used one onion roll i had left over, was wondeful made into crumbs- done in food prossesor
  • 1/4 c
    melted butter
  • 1 c
    shredded parmesan cheese

How To Make ~ sinfully good chicken tetrazzini ~ cassies

    Grill chicken, cool and cube. Set aside. In a large saucepan or dutch oven, over medium heat, melt butter and add onion and garlic, saute until onion is tender, stirring often. Stir in the flour and continuously stir for a minute. Whisk in the milks and wine. Continue cooking until thickened, about 5 minutes.

    Preheat oven to 350 degree F. Grease a 9 x 13 baking dish. Stir in the pepper, builllon, creole seasoning, cheese and cubed chicken, stir until cheese is melted. Stir in pasta, mix well. Spread mixture into prepared dish. Cover with foil and bake for 25 - 30 minutes or until bubbly.

    Mix crumbs, butter and Parmesan. Sprinkle evenly over pasta, place back into oven and bake another 15 minutes, or until golden.

    Leave set up for 5 minutes, before cutting. Serve with a salad and a good Italian bread if preferred. Delicious!
