sandy’s enchilada casserole

I got this recipe from a friend of mine (Sandy) and have made it for family gatherings. Everyone loves it! I usually buy a whole roasted chicken to use but I've also made it with pork carnitas (again, I purchased frozen, already cooked).

Ingredients For sandy’s enchilada casserole

  • 4 1/2 c
    chicken, cooked and shredded
  • 28 oz
    can of green enchilada sauce
  • 4 c
    monterey jack cheese, shredded
  • 16 oz
    sour cream
  • 1 pkg
    corn tortillas (i cut the tortillas in strips and use about 1/2 of a regular size bag of tortillas)

How To Make sandy’s enchilada casserole

    Layer 9 x 13 pan with the following: 1/2 the chicken 1/2 the enchilada sauce 1/2 the sour cream 1/2 tortillas 1/2 monterey jack cheese Then repeat.

    Cover at bake for 40 minutes at 375 degrees. Uncover and cook and additional 15 minutes or until lightly browned. Let sit a few minutes before serving.
