Ingredients
- 1 box rotini pasta
- 1 stick butter
- 1 large onion, sliced
- 2 - 8 oz packages button mushrooms, whole, fresh
- 1 can diced tomatoes with onion & garlic, drained
- 5 cloves garlic, minced
- 1/2 teaspoon salt & pepper
- 1 rotisserie chicken, deboned, any flavor
- 1/4 cup basil, fresh
- 1/3 cup balsamic vinegar
- 1/4 cup olive oil, extra-virgin
- 8 slices mozzarella cheese balls, fresh, sliced
- 8 slices bacon, cooked crisp & chopped
How To Make rotini & chicken w/ veggies

Step 1Cook pasta according to package directions, omitting salt.

Step 2Meanwhile, heat a large nonstick skillet over medium high heat. Melt butter.

Step 3Add onion & mushrooms; cook 8 - 10 minutes, or until onions are translucent. Add tomatoes, garlic, salt & pepper; cook 5 minutes. Add chicken just to warm through, 5 minutes.

Step 4Pour into a large bowl. Stir in pasta, basil, vinegar & oil; toss to coat.

Step 5Scoop onto plates & place 2 slices of fresh mozzarella & crumbled bacon on top. Broil, 2 - 3 minutes for cheese to melt, if desired.
