Roda's Easy Chicken and Rice Soup
I have used leftover roasted chicken breast or rotisserie chicken from the local supermarket.
I use Red Gold stewed, diced tomatoes.

- chicken stock
- 3 c
- roasted, grilled, or baked chicken--cubed
- 14 oz
- canned stewed, diced tomatoes with celery,onion, and green pepper--undrained
- 1 c
- frozen peas
- 2 c
- instant brown rice
1Combine all ingredients (except rice) in a 3 quart pot and bring to a boil over med heat; add instant brown rice. Continue to cook, covered, until rice is tender.
2NOTE: Can add additional stock if needed while cooking rice to achieve desired amount of soup broth.
