Roasted Greek Chicken

I came up with this after visit to a Greek Restaurant and having a wonderful meal of Greek Roast Chicken. I wanted to make it at home. This is a pretty close second.
It's a great dinner when you are going to be home all day or if you aren't afraid to leave dinner in oven.

Ingredients

4# chicken

small sized onion
1
lemon
olive oil, extra virgin
cavender's greek seasoning

Directions Step-By-Step

Wash the chicken and rinse the cavity. Dry inside and out with paper towel

Mix toegther in a small jar the juice of the lemon (save the lemon) and some evoo. to the consistancy of salad dressing.

peel and cut the onion in half

Put the onion and lemon in the cavity of the chicken and sprinkle the inside of the chicken with the Seasoning Mix. You can use it generously it isn't too salty.

Rub the chicken with the lemon juice and olive oil mixture. The sprinkle generously with the Seasoning Mix. Again, it isn't too salty. Be sure to get the back of the chicken too.

Put in a ziplock bag and refrigerate overnight.

Roast the chicken at 250 degrees for 5 to 6 hours; to an internal temperature of 180 degrees.

Let it rest atleast 15 minutes before carving.

    I love Cavenders Seasoning. One of my favorite seasonings. I use it in a lot of dishes. Will give this a try. Thanks for your contributions.

    I wish our local store carried the larger size . I can only find it in the 3 1/4 oz container.

    My husband makes something like this, he also slices lemon and puts it under the skin, I love Greek food, I hope many will try this I am sure it is wonderful.

    I love greek food.I live in Florida and never saw Cavenders Seasoning. Where have you purchased it or do you know where I can get it...is it sold online.

    I found Cavenders at a gourmet food shop here in West Michigan but my girls friend ( who has used it for YEARS) can get it in her local grocery store near Detroit. They do sell it on line at:

    I am going to order it since I bought the last of it and haven't been able to find it since.
    You will probably be as surprised as I was when you see it is from Arkansas!
    If you are anywhere near Naples Fl. I'd try a store there. I think there is a large Greek Community there.

    I have tried many other Greek Seasonings and this is the one we like the BEST by far.
    I hope you can find it it really is GREAT!
