Ingredients

1 c all purpose flour
1/4 c yellow cornmeal
1/4 c panko bread crumbs (plain)
3 Tbsp dry hidden valley ranch mix
1 tsp baking soda
4 eggs, separated
1 c buttermilk
2 Tbsp butter (melted)
1/4 c fresh chives (chopped)
3 1/2 c shredded cooked chicken
1/2 Tbsp red pepper flakes (optional)
PARMESAN RANCH DIPPING SAUCE
1 c mayonnaise
1/2 c greek yogurt
1 Tbsp dry hidden valley ranch mix
1/4 c parmesan cheese
2 tsp dijon mustard

Yummy ranch flavored chicken fritters with a ranch dipping sauce.

 

Directions

In a large mixing bowl combine the flour, cornmeal, breadcrumbs, Hidden Valley Original Ranch Mix and baking soda. Gently stir in the egg yolks, buttermilk and melted butter, Add chopped chives, shredded chicken and pepper flakes if using. Beat egg whites until stiff peaks form, gently fold into the batter. To save time I buy rotisserie chicken and shred that up.

I deep fry my fritters but you can pan fry them as well. Drop batter using a well rounded tablespoon into the hot oil. Cook 6 at a time. Fry for 3-4 minutes or until golden brown turning once. Drain Fritters on a paper towel.

In a small mixing bowl combine the mayonnaise, yogurt, Hidden Valley Original Ranch Mix, Parmesan and Dijon mustard. Serve with hot fritters.

Not heard of Panko bread crumbs, can I just use any brand of plain bread crumbs? Plan to make these and want to make sure I have it correct. Thank you

Panko is with the oriental food section...Since I started using them I don't use bread crumbs any more...They are cheap!!

Yes Margie you can use plain bread crumbs. I'm with Kimi on this one. Once I started using panko I have not used the regular ones since, but either will work if you can't find them. My grocery store keeps all the different types and flavors together in the bread isle.

well melissa my party got bagged and in a tantrum i put away the ingrdients..but I will lol..btw I get my panko at a chinese grocery..they are cheaper and in bigger bags..have used potatoe flakes in a pinch lol
