QUICK SPICY CHICKEN CREOLE
|1 lb||boneless, skinless chicken breasts, cut into 1" strips|
|1||14 oz can diced tomatoes w/ chilis|
|1 c||chili sauce|
|1-1/2 c||chopped green bell peppers|
|1/2 c||celery, chopped|
|1/4 c||chopped onion|
|2 tsp||minced garlic|
|1 tsp||dried basil|
|1 tsp||dried parsley|
|1/2 tsp||crushed red pepper|

Quick to make and, yes, spicy..Yum! I love how easyily quick it is to make! I usually serve it over rice, but it's great on its own.
Sparay a lg skillet w/ cooking spray. Place over high heat. Add chicken. Cook until no longer pink. Reduce heat to medium.
Add tomatoes and their juices, chili sauce, bell peppers, celery, onion, garlic, basil, parsley, red pepper and salt.
Bring to a boil. Reduce heat to medium-low. Simmer , covered for 10 mins, stirring occasionally.
