Ingredients For quick & easy poppy seed chicken casserole

  • 6 oz
    ritz crackers (2 sleaves in box)
  • 3/4 c
    butter
  • 1 Tbsp
    poppy seeds
  • 10 1/2 oz
    cream of chicken soup
  • 12 1/2 oz
    1 can premium white chunky chicken (i use the costco kirkland brand)
  • 1/2 c
    sour cream
  • 1
    6 x 8 baking dish

How To Make quick & easy poppy seed chicken casserole

    PREHEAT oven to bake 365 degrees F TIP-Most ovens have 5 rack settings. Use the 2nd rack setting from the top of oven for this recipe.

    PLACE the Ritz crackers in a 1 gallon plastic zip lock bag or bowl and crush crackers. Do Not crush crackers to fine. Add melted butter and poppy seed to crushed crackers and mix in bag or bowl. Spray a a 6 x 8 baking dish with butter and layer the dish with 1/2 of the cracker mix.

    DRAIN water in chicken can. Thoroughly combine the soup, sour cream and chunky chicken together and spoon the mixture over the crumb crust and spread evenly over cracker crumb mixture. Sprinkle the remaining 1/2 of the cracker mix over the top of the chicken mixture.

    BAKE in the preheated oven on the 2nd rack setting until the casserole is hot and bubbling and the topping is crispy brown, about 1 hour. Enjoy, Sam!
