I am catering a graduation/anniversary party this weekend and needed to come up with a chicken sandwich. This is that result. Add more cayenne if you like it bitey, like my family does. This is the toned down version I will be serving this weekend. 6/28/11 - I just realized that the seasonings I used were the same seasonings I use when making Emeril's Pulled Pork. Well Emeril, it works well with chicken too!

Ingredients For pulled chicken sandwiches

  • 3 lb
    rotisserie chicken, shredded
  • 1 can
    chicken broth
  • 1 Tbsp
    emeril's creole seasoning
  • 1 Tbsp
    brown sugar
  • 1/2 Tbsp
    ground cumin
  • 1/2 Tbsp
    paprika, sweet mild
  • 1/2 Tbsp
    coarse ground black pepper
  • 1/2 tsp
    cayenne pepper, or more to taste
  • 1/2 Tbsp
    salt
  • 6
    kaiser rolls

How To Make pulled chicken sandwiches

    Combine chicken broth, creole seasoning, brown sugar, cumin, paprika, pepper, cayenne pepper, and salt.

    Place shredded chicken in a crockpot. Pour chicken broth mixture over chicken. Cook on lowest setting (Warm on my crockpot) until hot throughout. Serve on kaiser rolls.
