Ingredients For powerful "change of life" soup

  • 1 Tbsp
    olive oil, extra virgin
  • 1 lg
    onion, diced
  • 5 clove
    garlic, minced
  • 32 oz
    chicken, vegetable or beef broth
  • 4 c
    water
  • 1 c
    mushrooms, sliced
  • 1 c
    okra, sliced
  • 1 can
    artichoke hearts, drained
  • 1 c
    broccoli florets, chopped
  • 1 lg
    baking potato, cubed
  • SEASONINGS:
  • 1
    bay leaf
  • 1 tsp
    thyme, dried
  • 2 tsp
    sea salt
  • 1/2 tsp
    red pepper flakes
  • 1/2 tsp
    cayenne pepper
  • PROTEIN:
  • 1 lb
    cooked & cubed, turkey, ham, chicken breast, shrimp or tofu
  • STARCH:
  • 1 c
    beans, rice (brown or white), orzo or any pasta, cooked
  • 1/4 c
    parsley flakes
  • 1/4 c
    basil, fresh, chopped
  • salt & pepper, to taste
  • lemon wedges

How To Make powerful "change of life" soup

  • 1
    In a large pot, heat oil. Add onion & saute until softened, about 5 minutes. Add garlic & saute, about 1 minute. Add broth, water, vegetables & seasonings. Bring to boil.

    Reduce heat, cover & simmer for 20 minutes. Add protein of choice & starch of choice & simmer 10 minutes more.

    Remove bay leaf. Stir in parsley & basil. Season with salt & pepper. Ladle into bowl & squeeze lemon wedge over soup & serve.
