Easy to make, this pineapple sweet and sour chicken uses simple ingredients and tastes delicious. Pineapple adds a burst of sweetness. The sauce adds tang and coats the tender and juicy chicken breast pieces. Onions, bell peppers, and mushrooms add color and crunch. Try adding other vegetables to suit your liking; Broccoli and snow peas would be good. This sweet and sour chicken is a winner.

Ingredients For pineapple sweet and sour chicken

  • 2 c
    white rice, uncooked
  • 20 oz
    pineapple chunks
  • 2 Tbsp
    vegetable oil
  • 1 md
    green or red pepper, cut into chunks
  • 1/2 c
    sliced fresh mushrooms
  • 1 md
    onion, cut into chunks
  • 1 lb
    boneless, skinless chicken, cut into 1 inch pieces.
  • 1 c
    sweet and sour sauce
  • 2 Tbsp
    low-sodium soy sauce

How To Make pineapple sweet and sour chicken

  • Prepare the white rice. Drain the can of pineapple reserving juice.

    Prepare rice according to package instructions. Drain pineapple and reserve 2 Tbsp of the juice.
  • Saute mushrooms, onions, and bell peppers.

    Heat oil in large skillet over medium heat. Add peppers, onions, and mushrooms. Cook until vegetables are tender-crisp. Remove vegetables from skillet and set aside.
  • Cook the chicken breast.

    Cook chicken in same skillet until the chicken is browned and cooked through.
  • Add vegetables to the chicken with soy sauce and sweet and sour sauce.

    Add vegetables back to skillet along with sweet and sour sauce, soy sauce, pineapple chunk, and reserved juice. Heat through.
  • Serve over white rice.

    Serve with hot cooked rice.
