I don't remember where I got this recipe, I have had it for about 14yrs. My daughter renamed it, Pinch Chicken, because she eats it with a tortilla and no silverware.

Ingredients For pinch chicken

  • 8 - 10
    pieces of chicken, cleaned and patted dry
  • 1
    large can of refried beans
  • 1
    large can of green enchilada sauce
  • 1 - 2 cups
    grated monterey jack cheese
  • 1
    envelope of taco seasoning

How To Make pinch chicken

    Spread refried beans in a 9 x 13 baking dish
  • 2
    Place chicken pieces on top of refried beans and sprinkle with all the taco seasoning.

    Mix cheese and enchilada sauce in a small bowl, and spoon over chicken.

    Bake at 350 for 1 hour, serve with salad and warm flour tortillas.
