- pieces of chicken, cleaned and patted dry
- large can of refried beans
- large can of green enchilada sauce
- 1 - 2 cups
- grated monterey jack cheese
- envelope of taco seasoning
1Spread refried beans in a 9 x 13 baking dish
2Place chicken pieces on top of refried beans and sprinkle with all the taco seasoning.
3Mix cheese and enchilada sauce in a small bowl, and spoon over chicken.
4Bake at 350 for 1 hour, serve with salad and warm flour tortillas.
