This is a tasty tasty favorite in my house.When serving pass out lots of napkins.It is as messy as eating wings with no bones left in the end, in fact there are no leftovers when we have this for dinner.
1Gather together all the ingredients.I gave no measurements because how much depends on how many sandwiches and how big you want them.
2cut the onion in half and then cut into thin to medium slices.
3in a med sauce pan place hot sauce and butter. On very low heat melt butter in the sauce.
4while butter is melting,slice the cheese and set a side,also get you lettuce and roasted peppers ready to use and set them a side as well.
5if your chicken breast is not thin enough pound it thinner. I use chicken breast that has been packaged as cutlets and I pound them thinner.
6add a little cooking oil to you frying pan enough to cover the pan bottom. and heat up the pan.once pan is Hot enough lower heat to med, med high
7place you chick a piece at a time into the HOT pan and very quickly with 2 forks shred the meat into small pieces..use 1 fork to hold the chicken and the second fork is used to shred by inserting tines into meat and pulling outward.Work quickly and finish 1 piece of meat before adding the next.
8when you are just about done add the onions to the pan.cook altogether until onion is tender and chicken is completely cooked.
9pour hot sauce mixture over meat and onions and mix together.lower heat and lay your sliced cheese over meat mixture.
10While cheese is melting,lightly toast your rolls.
11assemble the sandwich by placing lettuce on bottom half of roll,add chicken,blue cheese,blue cheese dressing and finnaly the roasted peppers.close the lid and enjoy!
