Ingredients For pecan soup

  • 1/2 c
    butter
  • 3
    celery ribs, chopped
  • 2 lg
    sweet onions, chopped
  • 1 lg
    baking potato, peeled & coarsely chopped
  • 4 c
    chicken broth, low salt
  • 3 c
    heavy whipping cream
  • 1 tsp
    salt
  • 1/2 tsp
    white pepper
  • 1 lb
    pecan halves, toasted
  • GARNISHES:
  • creme fraiche
  • chives, chopped
  • additional pecan halves

How To Make pecan soup

  • 1
    Melt butter in a dutch oven over medium heat; add celery & onions. Saute 20 minutes or until translucent.

    Add potato & next 5 ingredients. Bring to boil; reduce heat to medium low & simmer, uncovered, 30 minutes or until slightly thickened & potato is very tender. Remove from heat; cool slightly.

    Process soup, mixture in batches, in a blender (or Living Well Health Master) until smooth, stopping to scrape down sides as needed (not needed in Health Master). Ladle into serving bowls. Garnish as desired. Serve hot!
