Ingredients For pecan soup

1/2 cbutter
-
3celery ribs, chopped
-
2 lgsweet onions, chopped
-
1 lgbaking potato, peeled & coarsely chopped

4 cchicken broth, low salt
-
3 cheavy whipping cream
-
1 tspsalt
-
1/2 tspwhite pepper
-
1 lbpecan halves, toasted
- GARNISHES:
-
creme fraiche
-
chives, chopped
-
additional pecan halves
How To Make pecan soup

1Melt butter in a dutch oven over medium heat; add celery & onions. Saute 20 minutes or until translucent.

2Add potato & next 5 ingredients. Bring to boil; reduce heat to medium low & simmer, uncovered, 30 minutes or until slightly thickened & potato is very tender. Remove from heat; cool slightly.

3Process soup, mixture in batches, in a blender (or Living Well Health Master) until smooth, stopping to scrape down sides as needed (not needed in Health Master). Ladle into serving bowls. Garnish as desired. Serve hot!
