Pasta with Chicken & Veggies

I love sauteed mushrooms cooked with Old Bay Blackened Seasoning and I was wanting them again tonight for dinner, even though I had already had them 2 nights ago. So this is what I came up with. Joe and I decided we didn't want pasta sauce anymore lol just this.

Ingredients

1 pkg
spagheti noodles ( small pkg)

chicken breast halves, skinless and boneless
1 c
sliced mushrooms ( your favorite kind) or more if you want
1/2 c
onion thinly sliced
1 c
red bell pepper thinly sliced
3 Tbsp
olive oil, extra virgin
4 Tbsp
butter ,divided
3 Tbsp
old bay seasoning (blackened)
salt and pepper to taste

Directions Step-By-Step

Slice peppers, onions and mushrooms. Dice chicken breast into about 1 inch chunks.

In a large skillet heat evoo and 1 tablespoon butter add chicken and sprinkle with 1 tablespoon Old Bay Blackened seasoning. Cook until done. About 6 minutes or so. Remove from skillet and set aside.

Cook pasta according to package directions. While pasta is cooking add remaining butter to skillet and cook peppers onions and mushrooms until done. ( I cooked peppers and onions for about 3 minutes then added the mushrooms). When pasta is done drain, salt & pepper to taste. ( add about 1 tablespoon butter to pasta,,,,optional)

Place pasta on plate, add veggies and top with chicken.
