Ingredients
| 4 | chicken breast halves,1/4" thick |
| 2 c | panko crumbs |
| 1 c | romano cheese, freshly grated |
| 1 tsp | pepper, freshly ground |
| 2 Tbsp | olive oil |
| 4 Tbsp | grainy mustard |
| 2 Tbsp | water |
| 1 Tbsp | olive oil |

Line a jelly roll pan with foil. place a sprayed wire cooling rack in the pan.Flatten the chicken breasts, between sheets of plastic wrap, with a rolling pin.Combine the Panko, Romano cheese, pepper and olive oil In a shallow dish. Whisk the grainy mustard, water, salt, pepper and olive oil in another shallow dish.Dip the chicken breasts into the mustard mixture; then heavily coat with the Panko mixture. Place on the wire rack. Let the coating set 10-15 minutes.Bake 375 degrees, 30-35 minutes, until golden brown.

I really like the fact that you can get crispy chicken and not fry it. I see that you used panko bread crumbs, they have finally come up with gf bread crumbs ( not panko) but good nonetheless. I like the absence of grease that can fall into chicken. This sounds like a good recipe even when watching your weight.
