Oven baked chicken in a light sauce
I brined the chicken for 24 hours.this will make this chicken SOOOOO juicy.
brined liquid ( have this recipe posted)
salt and pepper ( to sprinkle on top)
soak the chicken in the brine for 1 day, then rinse off. Pat the chicken dry then rub the whole chicken with olive oil. sprinkle a (little salt and pepper) on top .
preheat oven to 375 degree and bake for 1hour and 40 minutes or until juice runs clear.
To make sauce remove chicken and with the remaining dripping and a 1 teaspoon of quick mixing flour and whisk to smooth. add alittle chicken broth if needed.
