This recipe is also amazing by leaving the chicken out and using the rest of the ingredients to steam fresh fish over. My favorite is Tilapia! Just cook according to recipe (except chicken) and lay 2 or 3 fillets of Tilapia over the mixture, cover and cook til fish is no longer translucent.

1 lb
chicken breasts, boneless and skinless
2 Tbsp
olive oil, extra virgin
1 medium
cooking onion
green pepper, diced
28 oz
can diced tomato
1 c
fresh sliced mushrooms
1 c
fresh diced carrots
1 small
jar green olives w/ pimentos, roughly chopped
salt, pepper and garlic powder, to taste

Directions Step-By-Step

Season chicken with salt and pepper. Saute in olive oil until outside is no longer pink. Remove chicken from pan.
In the same pan, add onion, green pepper and carrots and saute til softened. Add in mushrooms and can diced tomato. Simmer about 5 minutes. Add olives and chicken back to pan and simmer til chicken is no longer pink.
Best served with brown rice but also yummy with white rice or egg noodles!
