Ingredients

2 refrigerated pie crusts for 9 inch pie
1 1/2 lb cooked chicken breasts chopped
1 md yellow onion chopped
3/4 c chopped celery
2 carrots sliced
3 potatoes chopped
1 1/2 tsp chicken bouillon granules
1/4 tsp poultry seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp parsley flakes
8 oz frozen mixed vegetables
1 stk real butter
1/4 c flour
3 c chicken broth
alittle shredded parmasean cheese
alittle med chedder cheese shredded
to taste salt
to taste pepper

THIS WAS A LITTLE BIT OF A CHALLENGE TO WRITE THIS RECIPE BECAUSE I USUALLY COOK THE ENTIRE 3 POUND BAG OF BONELESS CHICKEN BREASTS AND MAKE POT PIE AND CHICKEN NOODLE SOUP SO I CAME AS CLOSE AS I COULD. THIS IS SO GOOD MY FAMILY ALWAYS ASK FOR MORE. THIS IS A RECIPE YOU WILL LOVE.. ENJOY...

place chicken breasts in stock pot cover with water, add chopped celery, sliced carrots, onions cook til chicken is done.. remove chicken place in freezer til cool enought handle cut into pieces.

add to stock pot chopped potatoes,chicken bouillon,seasonings and frozen mixed vegetables simmer til potatoes are tender.

melt one stick of butter in pan or electric skillet add flour to make a roux add 3 cups of chicken broth (from the stock pot used to cook chicken)when thicken turn down heat and add chicken, use a slotted spoon remove vegetables and potatoes from stock pot and add to roux add salt and pepper to taste.

pour into bottom of pie crust sprinkle with alittle shredded parmasean and mild cheddar. Cover with top crust put 4 one inch slits on top of top crust and bake 425 degree oven til golden brown approx 30 minutes

i've tried a recipe similar to this one using the refrigerated pie crust and i thought the crust tasted too sweet for the chicken recipe. any other ideas besides making the crust from scratch? Maybe I got the wrong pie crust?

If I dont make it from scratch I usually use the pillsbury pie crust it turns out really good.

When I make my chicken pot "pie", its not really pie. I only have a top crust and I make it with stuffing! The ingredients in this pie sound delicious, I like the idea of a roux and cheeses!

@Jodi its exactly what you said that makes it good. It's the roux with the two cheeses sprinkled on top and I always use real butter. I make a chicken casserole with the stuffing on top its really good also.
