Ingredients

6 lg boneless, skinless chicken breasts
1 c hot water
1/3 c frozen orange juice concentrate
1 Tbsp powdered ginger (or fresh)
1 Tbsp red chili flakes
1 tsp dried orange peel (or fresh)
3 Tbsp dried chives (or fresh)
4 clove garlic, minced

Christine's Notes:
This is one of the recipes I created a few years ago when I was on a "no salt, flour, dairy, oil, sugar" diet. It was hard to cook things with any flavor using those perimeters, but this was one of the dishes that delivered on big flavor. I have served it to company many times and it always gets rave reviews and requests for the recipe. I hope you will try it, as it is healthy AND delicious! I like to serve it over steamed rice with a side of broccoli, green beans, or asparagus. Enjoy!
 
 

Directions

1
Put chicken in a large skillet or pot. Mix sauce ingredients together. Pour over chicken, cover with lid, and bring to boil. Reduce heat to medium and continue to cook until chicken is fully cooked and sauce has reduced, about 30-45 minutes.

oops I forgot your the "chili girl" LOL am more of a chicken eater than red meat cept if I make spahgetti, stew or pork chops. I substitute alot of recipes with chicken! I make earl beef pot roast but I think roasting a chicken with veggies is just as good:)

Thanks, Renee! It is good! If I don't say so myself! LOL!!! I haven't made it in a while. I need to make it again soon. I ate it so much there for a while I kind of got burned out on it. LOL
