My family's favorite chicken enchalidas

I enjoy making people happy thru my cooking and baking, I'm not the greatest cook , but what I do cook I do it very well. this is one of my family's favorites that I make from scracth.. hope you enjoy.

chicken boneless-taco seasoning-salsa -and water
oil for frying corn tortillas chedder cheese or a mix of chedder and jack cheese
enchalidas sauce

Directions Step-By-Step

add about 8 chicken boneless breast to crock pot , to taste add taco seasoning, salsa , diced onion if you would like , and about 1/4 cup water ..cook on low for 8 hrs ,, after 5 hrs start to pull meat apart and begin to taste add more seasoning if desired .. add frying oil to a frying pan on med high heat, dip yellow corn tortilla in oil just long enough to soften place in baking dish.add desired amount of chicken , and cheese roll ,repeat .when done rolling all enchalidas , cover with enchalida sauce and top with cheese.. cook for 30 - to 35 mins in a 350 degree oven
