olive oil

bone in chicken thighs skin removed
1 large
onion sliced
1 Tbsp
each mccormick gourmet cinnamon roasted ground saigon and garlic powder california
1 tsp
each ground cumin, sea salt, and ginger
1/4 tsp
saffron crushed
1 can(s)
14 1/2 oz. diced tomatoes undrained
1 c
chicken broth
2 Tbsp
honey
1/3 c
raisins

Directions Step-By-Step

Heat oil in large skillet over medium high heat. Add chicken and cook 8 minutes turning once. Remove chicken from pan.

Stir onions into skillet. Cook about 5 minutes until golden. Add seasoning. Stir in tomatoes, chicken broth and honey. Return chicken to skillet and bring to a boil. Reduce to a simmer and simmer 10 minutes covered. Add raisins. Cook another 10 minutes.

Serve with cooked couscous and garnish with cilantro if desired
