I had this plate once at Epcot Center in Orlando, Fl. So, remembering the flavors, I came up with my own version of it (minus the cinnamon).

Blue Ribbon Recipe

Ingredients

3 lb
chicken, thighs are best, but you can use breast
1 small
diced onion
3 clove
garlic
2
lemons
2 tsp
paprika
1 tsp
cumin
1 tsp
ginger
1 tsp
tumeric
1/4 tsp
ground black pepper
2 Tbsp
olive oil
1 c
green olives
1/2 c
water
1/4 c
cilantro
1/4 c
parsley

Step-By-Step

1In a bowl, mix together the paprika, cumin, ginger, tumeric, and pepper. Gently pat the chicken pieces dry. Marinade in this dry rub for about 1 hour.

2In a large skillet, add the olive oil and the chicken. Brown the chicken for about 3 minutes on each side. Then, add the onions, garlic, zest of 2 lemons, and juice. Next, add the water and green olives.

3Let it simmer for about 30 minutes, until cooked thoroughly. Garnish with cilantro and parsley just before serving.
