Ingredients For *** mom's chicken picatta #1 ***

4skinless chicken breasts

1egg

3 Tbsplemon juice, fresh

1/2 cchicken stock
-
1/2 cflour
-
1/4 tspgarlic powder
-
1/4 tsppaprika
-
1/4 cbutter, melted
-
1 Tbspparsley, chopped

1lemon, sliced
-
capers (optional)
-
peas (optional)
How To Make *** mom's chicken picatta #1 ***

1Pound chicken in wax paper, thin.

2In small bowl, whisk egg & 1 Tbsp lemon juice.

3In another bowl, combine remaining lemon juice & chicken stock.

4In another large bowl, sift flour, garlic, paprika & butter.

5Dip chicken into egg mixture & then in flour mixture. Place in skillet & cook chicken 1 minute. Then pour lemon juice/stock mixture over chicken, cover, cook 10 - 15 minutes.

6Transfer chicken to platter. Stir sauce in pan & pour over chicken. Sprinkle with parsley & lemon slices.
