MOIST, HOISIN CHICKEN

|1 Tbsp||sesame oil|
|1/4 c||hoisin sauce|
|2 tsp||light soy sauce|
|1/2 tsp||ground ginger|
|1 Tbsp||rice-wine vinegar|

A quick and easy chicken dish w/ anasian flavor. I serve w/ thin asian noodles, and stir fried fresh veggies.
Heat oven to 375. Line rimmed baking sheet w/ foil, spray the foil w/ cooking spray. Sprinkle chicken w/ the salt.
In lg skillet, over med-high heat,heat oil until hot. Cook chicken until browned, turning once. About 6 mins. Place chicken, skin-side up, on baking sheet, bake 10 mins.
In bowl, whisk together hoisin sauce, vinegar, saoy sauce and ginger. Reserve 1/2 of sauce. Brush chicken w/ sauce and cook another 10 mins, or until juices run clear. Spoon reserved sauce over chicken. Sprinkle w/ scallions.
