Ingredients

2-3
chicken breasts, boneless and skinless
1
bag instant rice
1 can(s)
cream of chicken soup
1 can(s)
black beans
1 can(s)
rotel tomatoes
1
corn
1/2 pkg
taco seasoning mix
velveeta
shredded cheddar

Directions Step-By-Step

Season and bake chicken breast. Prepare rice per directions. In casserole dish add rice, soup, black beans, tomatoes, corn and taco seasoning. Add Velveeta and shredded cheese to your liking.

Bake at 350 degrees for 20-30 minutes til cheese melts. I add a bit more cheese and Chili Lime tortilla strips on top before serving.

Would be great with sour cream, salsa and guac!
