Mert's Sour Cream Chicken Enchiladas

This is Mom's recipe and happens to by my husband's favorite meal of all times.

Ingredients

1 pkg
corn tortillas
2 can(s)
cream of chicken soup
3 c
sour cream
2 can(s)
(4 oz) chopped green chiles
4
chopped scallions
1 c
chopped black olives
3 c
chopped cooked chicken
1 c
grated cheddar cheese
1 c
grated monterey jack cheese

Directions Step-By-Step

In a large bowl, mix all ingredients except tortillas and cheeses.
In another bowl, mix the two cheeses.
Lay a tortilla flat on a surface. Spoon a large spoonful of chicken mixture onto tortilla. Top with a spoonful of cheese.
Roll up and place (seam side down) into a casserole dish. Repeat till casserole is full. You will have remaining meat mixture. Pour over tortillas. Top with cheese.
Bake for 45 min at 350 degrees or till bubbly and cheese is melted.
