Ingredients

bone-in chicken breasts, skinned
1 large
green bell pepper, sliced
1 large
onion, sliced
1 large
can of tomatoes, broken up
2 Tbsp
olive oil
salt and pepper
1 1/2 tsp
italian seasoning
1 pinch
saffron
1 box
orzo pasta

Step-By-Step

1Season the chicken breasts with salt and pepper.
Heat olive oil over medium heat.
Brown chicken on all sides on medium-high heat.

2Add the onion, green pepper, tomatoes, and Italian seasoning.
Bring to a boil, stirring to combine ingredients.
Reduce heat to simmer and cover.

3Continue to cook about 20 minutes, stirring occasionally.
Meanwhile, cook and drain the orzo.

4Add saffron strands to chicken mixture and stir.
Cook about 5 more minutes, then serve over orzo and enjoy! (You may want to top it off with some shredded mozzarella or Italian-style cheese.)
