Ingredients For megan's chicken caccitore

    bone-in chicken breasts, skinned
  • 1 lg
    green bell pepper, sliced
  • 1 lg
    onion, sliced
  • 1 lg
    can of tomatoes, broken up
  • 2 Tbsp
    olive oil
  • salt and pepper
  • 1 1/2 tsp
    italian seasoning
  • 1 pinch
    saffron
  • 1 box
    orzo pasta

How To Make megan's chicken caccitore

    Season the chicken breasts with salt and pepper. Heat olive oil over medium heat. Brown chicken on all sides on medium-high heat.

    Add the onion, green pepper, tomatoes, and Italian seasoning. Bring to a boil, stirring to combine ingredients. Reduce heat to simmer and cover.

    Continue to cook about 20 minutes, stirring occasionally. Meanwhile, cook and drain the orzo.

    Add saffron strands to chicken mixture and stir. Cook about 5 more minutes, then serve over orzo and enjoy! (You may want to top it off with some shredded mozzarella or Italian-style cheese.)
