I really enjoyed and so did my boyfriend. I got some of the ideas from my former Culinary Instructor. I love to cook and bake. It's a spin off of the traditional barbecue chicken. I would also recommend covering the chicken while you bake it so the chicken doesn't dry out while it's cooking. The vegetables will also help with the juiciness of the chicken. I am hoping to make this for my parents when I get to see them and I hope they will like it as well. Ingredients For maria's yummy chicken

  • 1
    red pepper (cut into thin strips)
  • 1
    green pepper (cut into thin strips)
  • 1/2
    of an onion
  • 1/2 tsp
    original tabasco sauce
  • 1 1/2 Tbsp
    granulated sugar or if you have it you can use brown sugar
  • 2 c
    of carolina style barbecue sauce
  • 1 pkg
    chicken, thawed (i used chicken breasts and legs but it doesn't matter what kind you use)
  • baking dish (glass would be the best)
  • tin foil

How To Make maria's yummy chicken

  • 1
    Pour the barbecue sauce in a small bowl and add sugar and Tabasco Sauce and mix together (the barbecue sauce should taste sweet with a hint of spice)

    Put a piece of tin foil in the bottom of baking dish and brush a light layer of sauce over it this will help it from not sticking to the bottom and makes for an easy clean-up

    Cut peppers and onion into thin strips and spread them evenly on the bottom of the dish (I put them on the top but it is easier if they are on the bottom)

    Take excess fat off of chicken if there is any then place the chicken on top of the vegetables

    Put a layer of sauce over the chicken and bake in a 375 degree oven for a half hour
  • 6
    When the half hour is up take it out and check the temp it should be 165 degrees if it isn't put another layer of sauce over it and put it back in for another 15 minutes or until chicken reaches 165 degrees

    If you have any sauce left over put another layer of it over the chicken and serve
