Ingredients For mama "g's" paella

  • 10-12
    chicken pieces: breasts cut in 1/2, thighs, drumsticks & wings
  • 1/2 c
    oilive oil
  • 1/2 lb
    spanish chorizo
  • 1 md
    onion- sliced
  • 4 clove
    minced garlic
  • 1/2 tsp
    spanish saffron
  • 1/2 tsp
    salt
  • 1 1/2 c
    long grained rice, cooked
  • 4 c
    chicken broth
  • 1 pkg
    frozen artichoke hearts or peas
  • 1/2 lb
    shrimp, shelled & deveined
  • 1
    dz. clams

How To Make mama "g's" paella

    Heat oil in large skillet. Quickly brown chicken, remove, set aside. Brown Chorizo in same pan, set aside, drain all but 2 TBSP. fat. Add onion, garlic, saffron & salt, cook until onion is soft. Add rice, stir lightly. Add broth - DO NOT STIR! Arrange artichoke hearts or peas, chicken, chorizo & shrimp around pan. Bring broth to a boil, place pan in 350 degree oven for 35 minutes. Steam clams until shells open. Remove paella from oven, arrange clams on top. Let paella rest for 3-5 minutes before serving.
