Ingredients For lowcountry cinnamon chicken

  • 1/2 c
    raisins
  • 2 md
    apples, peeled, cored & chopped fine
  • 1/2 c
    almonds, slivered
  • 1 can
    water chestnuts, chopped fine
  • 3/4 c
    brown sugar, firmly packed
  • 1 stick
    butter, melted
  • 1 tsp
    cinnamon, or more to taste
  • 2 tsp
    curry powder
  • 8
    chicken breast halves, skinless and boneless

How To Make lowcountry cinnamon chicken

    Preheat oven to 350 degrees F.
  • 2
    Mix all ingredients (except chicken) in a medium bowl.

    Pound out chicken breasts until very thin. Place a full Tbsp of apple mixture on each chicken breast. Bring up corners & secure with toothpick. Turn over & place in medium-sized baking dish.

    Place remaining apple mixture on top of each breast. Cover tightly with foil & bake for 35 - 40 minutes, basting at least twice with juices.
