Low-fat chicken pasta salad w/ BBQ dressing

I wanted a chicken salad w/out all the mayonnaise, so I came up w/ something a little different!

Ingredients

3
boneless, skinless chicken breasts
1/ 16 oz pkg
whole wheat small pasta shells.
1 c
bbq sauce
1 c
light mayonnaise
1 tsp
ground cumin
1 c
jicama, peeled, diced
2
red bell peppers, seeded, diced
2
orange bell peppers, seeded,diced

15.25 oz cans, whole kernel corn, drained.

15 oz cans black beans, rinsed, drained.
1 small
jalapeno pepper, chopped.
1 small
red onion, chopped.
1 c
bbq sauce

Directions Step-By-Step

Place chicken breasts in saucepan over medium-low heat. Pour 1 cup BBQ sauce over chicken, let simmer until no longer pink, about 5-7 min. Cool, dice chicken. Cook pasta as directed, drain, run under cold water. Drain again. In lg bowl, whisk together remaining BBQ sauce w/ mayonnaise until combined. Mix in cumin and diced chicken. Place all other ingredients in bowl and fold gently to combine w/ dressing. Serve warm, or chilled.
