I've always found chicken casseroles that I like, but never have loved. So, one day I was looking through some chicken casserole recipes & combined ingredients from different ones, as well as took some ingredients out & added some of my own. WE LOVE IT! Hope you do too! :-)

Casseroles are always at the top of our minds when we need an easy dinner option. This cheesy broccoli and chicken casserole will be on that mental list. It's an all-in-one dinner - chicken, vegetables, and rice all in one dish. Wild rice adds much more flavor than traditional white rice. It's filled with tender and juicy chicken. On top is a cracker and poppyseed mixture that, once baked, creates a nice crunchy texture. Your family will gobble up this easy dinner.

Ingredients For lindsay's cheesey broccoli & chicken casserole with crunchy topping

  • 4
    baked chicken breasts
  • 1 pkg
    Steamfresh broccoli
  • 1 can
    cream of chicken soup (10.5 oz)
  • 1 c
    shredded cheddar cheese
  • 8 oz
    sour cream
  • 1 pkg
    long grain & wild rice mix (cooked to package directions)
  • 1 pkg
    Ritz crackers
  • 1 Tbsp
    poppy seed (more if desired)
  • 1 stick
    margarine

  • Chicken baking in the oven.

    For the casserole, bake chicken.
  • Chopping cooked chicken.

    After cooled, chop into small cubes.
  • Cooking rice according to the package.

    Cook rice to packages directions.
  • Chicken, rice, broccoli, soup, cheese & sour cream in a baking dish.

    Mix those two ingredients together along with broccoli, cream of chicken soup, cheese & sour cream. Stir until well combined. Pour this mixture into greased casserole dish.
  • Melted butter in a bowl.

    For the topping, melt the one stick of butter.
  • Ritz crackers crushed and in a resealable bag.

    Put Ritz crackers into a big Ziploc bag & crush.
  • Crackers and poppyseeds sprinkled over the casserole.

    Mix above two ingredients along with the poppy seed. Sprinkle all across casserole.
  • Chicken casserole baking in the oven.

    Bake at 350 degrees for 30-45 minutes.
