Lime & Lemon Chili Chicken for the Crock Pot

This is a staple for my low carb tendencies! However, I love this dumped all over my Cilantro Lime Rice! So flavorful, and easy! The aroma while cooking definitely causes some salivating!

Ingredients

3-4 Tbsp
chili powder
1-2 tsp
salt
1/2 tsp
pepper
1/2 tsp
cumin
3-4 lb
chicken thighs, skinless and boneless (chx breasts don't work well)
1 large
onion cut in wedges
1/4 c
fresh lime juice
1/4 c
fresh lemon juice
4 clove
garlic minced
1
4 oz can of diced green chiles
lime zest from 1/2 of a lime

Step-By-Step

1Rub the chicken down with the salt and spices, and arrange in the crock pot.

2Add the garlic, onion, lime zest, and chilies.

3Pour juice over all the chicken.

4Cook on low for 5 hours in your crock pot.

5Top it off with fresh green onion or cilantro. I like to have a spread of sides from tortilla's, cilantro lime rice, sour cream, sauteed zucchini's, tomatoes & jalapeno's.....the flavor possibilities are endless!
