This is a quick, easy to make healthy meal on busy weeknights. It's 7 SP (Weight Watcher) for one serving. I usually double the recipe for my family of 6 and then have leftovers for lunch the next day.

Stove Top

Ingredients

1/2 Tbsp
olive oil
1 lb
ground chicken
2 clove
garlic
1
onion, diced
1/4 c
hoisin sauce
2 Tbsp
low sodium soy sauce
1 Tbsp
rice wine vinegar
1 Tbsp
ginger, freshly grated
1 tsp
sriracha
1 can(s)
8oz water chestnuts, drained and diced

green onions, thinly sliced

head butter lettuce

Directions Step-By-Step

Heat olive oil in non-stick pan over medium high heat Add ground chicken, brown and crumble. Drain excess fat.

Combine in a small bowl garlic, hoisin sauce, soy sauce, vinegar, ginger and Sriracha. Mix to combine.

Add onion to chicken, mix together. Pour in hoisin mixture and cook for two minutes until onions are translucent. Stir in chestnuts and green onions. Stir and cook for another minute.

Serve on pieces of lettuce.
