Ingredients

4
boneless skinless chicken breasts
1/4 c
flour
1
garlic clove, minced
1 tsp
salt
1/2 tsp
freshly ground black pepper
2 Tbsp
olive oil
2 Tbsp
butter
2 Tbsp
fresh lemon juice
1/4 c
dry white wine or vermouth
2 small
lemons, thinly sliced
1/4 c
fresh parsley, chopped

Step-By-Step

1Blend the flour, garlic, salt and pepper in a shallow bowl.

Place the chicken breasts between two pieces of waxed paper. Pound with flat side of mallet until approximately 1/4" thick

Dredge the chicken in the flour mixture
2Heat the oil and butter in a large heavy skillet over medium heat until butter melts.

Add the chicken pieces and cook until light brown on both sides.

Remove the chicken with a slotted spoon onto a serving platter and cover to keep warm.

Reserve the pan drippings.
3Add the lemon juice and white wine to the reserved pan drippings and stir using a wooden spoon to deglaze the skillet.

Return the chicken to the skillet. Add the lemon slices.

Cover and simmer over low heat for 30 minutes or until the chicken is cooked through.
4Remove the chicken with a slotted spoon to a serving platter.

Drizzle with the sauce and sprinkle with parsley flakes.

To spice the dish up a bit, use chopped fresh cilantro in place of parsley.
