What can I say...sometimes I just have to come up with a new chicken recipe...

Ingredients

4 lb
whole chicken...( doesn't have to be perfect)

lemons
5
garlic cloves
1 pkg
chives or scallions
1 bunch
parsley
1/4 c
olive oil
1/2 stick
butter, room temperature
1 Tbsp
paprika
salt/pepper to taste

Directions Step-By-Step

zest the lemons, seperate...1 will be for the cavity of the chicken...the other will be mixed with the room temperature butter.

Stuff the chicken with the chives or scallions, the zest of one lemon, garlic cloves and parsley and the juice from the two lemons.

sprinkle the entire chicken with salt,pepper, paprika, drizzle the top with olive oil.

bake at 350 degrees for about 1.5 hours ( or until brown and done at internal temperature of 155)

combine the room temperature butter with the other half of lemon zest,and serve each piece with a teaspoon of the mixture....soooo tender and flavorful.
