Ingredients

4 lb
whole chicken...( doesn't have to be perfect)
2
lemons
5
garlic cloves
1 pkg
chives or scallions
1 bunch
parsley
1/4 c
olive oil
1/2 stick
butter, room temperature
1 Tbsp
paprika
salt/pepper to taste

Step-By-Step

1zest the lemons, seperate...1 will be for the cavity of the chicken...the other will be mixed with the room temperature butter.
2Stuff the chicken with the chives or scallions, the zest of one lemon, garlic cloves and parsley and the juice from the two lemons.
3sprinkle the entire chicken with salt,pepper, paprika, drizzle the top with olive oil.
4bake at 350 degrees for about 1.5 hours ( or until brown and done at internal temperature of 155)
5combine the room temperature butter with the other half of lemon zest,and serve each piece with a teaspoon of the mixture....soooo tender and flavorful.
