I have a Thai friend who teaches me how to cook Thai food. This is a popular (and delicious) salad made with pork (moo means pork in Thai). You can also substitute chicken, if you prefer, to make Laab Gai (gai mean chicken).

Ingredients For laab moo

  • ~500 g
    minced pork
  • 2-3 Tbsp
    fish sauce
  • 1-2
    onions, finely diced
  • 1/4 - 1/2 tsp
    salt
  • ~4 Tbsp
    finely chopped thai parsley
  • ~3 Tbsp
    fresh lime juice
  • 1-2 Tbsp
    red chilli flakes
  • 15-20
    thai basil leaves, whole
  • ~2 Tbsp
    rice powder*

How To Make laab moo

    Brown the meat over medium heat. When the meat is almost finished browning, add the fish sauce. Leave over medium heat until meat is completely cooked, then remove from heat.

    Once you have removed the meat from heat, add the salt and diced onions. Mix well, and leave to cool.

    Once cool, add the parsley, lime juice, red chili flakes, basil leaves, and rice powder. Mix well and serve.

    *To make the rice powder, brown some (uncooked) rice over medium heat in a frying pan (no oil). Use a wooden spoon to constantly move the rice around the pan so that it browns evenly. When the rice is brown (just starting to burn), remove from heat and let cool. When the rice is cool, transfer to a food processor and process to make a powder. Push the powder through a mesh sieve to make sure that only the powder gets through. You can return the bigger pieces left behind in the sieve to the processor and process again until you have all powder.
