King Ranch Chicken

This is another of the casseroles I cook for my church members. They love it and I rarely have any leftovers. It is the recipe posted on the box that 8 cans of Rotel tomatoes comes in...Hope you like it as well as we do! Quick, easy, and good!

Ingredients

1/2 stick
butter
1/2 c
chopped bell pepper
1/2 c
chopped onion
1 can(s)
cream of chicken soup
1 can(s)
cream of mushroom soup
1 can(s)
rotel tomatoes, undrained
2 c
cooked chicken, chopped
pam no stick spray

6 inch corn tortillas torn into bite size pieces
2 c
shredded sharp cheddar cheese

Step-By-Step

1Preheat oven to 325 degrees.

2Melt butter in large saucepan and add bell peppers and onions. Cook about 5 min. until tender.

3Stir in both soups, Rotel, and chicken. Blend well.

4Spray 9X13 baking dish with Pam. Layer 1/3 of tortillas, tomato mixture, and cheese evenly in dish. Repeat layers twice more, ending with cheese.

5Bake, uncovered, 40 minutes or until hot and bubbly.
