This recipe is by the wonderful chef and cookbook author, Joan Nathan. I have nothing but praise for all of her recipes I've tried. This one is one of my husband's favorites and deserving of a special occasion!

Ingredients

2
eggs
2 tsp
water
1 c
bread crumbs or matzo meal
1 tsp
salt
1 1/4 Tbsp
pepper
1 1/2
3 pound fryers, cut up
1/2 c
vegetable oil for browning chicken
1 c
hot water
1 c
orange juice
1/4 tsp
ground ginger
1/4 to 1/2 c
honey (i find 1/4 cup to be enough.)

Directions Step-By-Step

1
Beat eggs with 2 teaspoons water. In a separate bowl, mix the breadcrumbs with the salt and pepper. Dip the chicken, one piece at a time, in to egg mixture, then the breadcrumb mixture.
Heat the oil in a heavy skillet and brown the chicken pieces on all sides, then remove to a baking pan.
2
Heat the oven to 325 F.
Mix the cup of hot water (I usually boil it first in a tea pot or in the microwave.) with the honey, orange juice and ginger.
3
Pour the sauce over the chicken. Bake uncovered in a parchment lined baking pan for 45 minutes, basting occasionally.
