Get your smoker ready (or use your bbq grill (indirect heat) with a smoke box) and enjoy some delicious smoked jerk chicken. If jerk seasoning is not readily available in your grocery store -- mix 1 tsp. onion powder, 1/2 tsp each - sugar, crushed red pepper, and crushed dried thyme. Add 1/4 tsp. each - salt, ground allspice, and ground cinnamon. Recipe is from B H & G

Ingredients For jerk-style smoked chicken

  • 3 lb
    meaty chicken pieces (breast halves, thighs, and drumsticks), skinned if desired
  • 1/2 c
    tomato juice
  • 1/3 c
    finely chopped onion
  • 2 Tbsp
    fresh lime juice
  • 2 Tbsp
    water
  • 1-2 Tbsp
    jamaican jerk seasoning
  • 1 Tbsp
    vegetable oil
  • 1 Tbsp
    pickapeppa sauce (optional)- you can't find it on the grocery aisle with worchestershire sauce, etc. it imparts a great flavor.

    cloves garlic, minced
  • 1/2 tsp
    salt
  • lime wedges

How To Make jerk-style smoked chicken

    Place chicken in a resealable plastic bag set in a deep dish. For marinade, combine next 9 ingredients (through salt). Pour marinade over chicken. Seal bag; turn to coat chicken. Marinate in the refrigerator 1-4 hours, turning bag occasionally.

    Meanwhile, soak 6-8 fruit wood chunks in water 1 hour.

    Prepare smoker according to manufacturer's instructions. Pour water into water pan; add wood chunks. Place chicken, bone sides down, over water pan. Smoke, covered, 1 1/2 to 2 hours or until the chicken is done (170 degrees for breasts, 175-180 degrees for thighs and drumsticks. If desired, serve chicken with lime wedges.
