Jerk Chicken - Cassies Way

|1||3 pound chicken, cut into pieces. i used 4 thighs/ 3 breasts cut up|
|2 tsp||ground allspice|
|2 tsp||packed brown sugar|
|2 tsp||onion powder|
|1 tsp||dried minced garlic - was out so used 3 minced cloves fresh|
|1 tsp||ground nutmeg|
|1 tsp||black pepper|
|1 tsp||dried onion flakes ( optional )|
|1 tsp||ground ginger|
|1/2 tsp||cayenne - i used more|
|2||dried habaneros/ crushed - optional|
|1/2 tsp||ground cinnamon|
|1/2 tsp||dried thyme|
|1/2 tsp||red pepper flakes - i used more|
|1/4 c||vegetable oil|
Love this chicken. The aroma throughout the house is just amazing...the hardest part about this recipe is waiting to bake it...lol!
I spice mine up a bit more than the amount of spices listed. Friends have told me its restaurant quality...I tend to agree...
Pour the vegetable oil into a 9x13 inch baking dish.
