I have served this at almost every bar b q, family gathering, etc since I started eating healthy and needed something filling and great to have for meals and snacks. This can be used is several meals. I eat on salads, in burritoes, on chips, in casseroles, in soups, etc.. Have fun and eat healthy!

Ingredients

3 can(s)
black beans
4 to 6 can(s)
each of any kind of bean you wish. i use red, dark red kidney, pinto, chick a peas, chili,
1 c
favorite salsa
1 can(s)
corn (optional)
1 can(s)
rotel
1 pkg
taco seasoning mix
1 can(s)
green chiles, mild chopped ( optional - can use jalepeno instead)
1 can(s)
large - all whilte meat chicken (optional - can also use a lb of seased hamburger)
salt to taste
garlic to taste

Directions Step-By-Step

Drain all but the black beans and in a large pot mix all ingredients. Serve hot or cold - if you serve hot, bring to a boil and simmer for 10 min - let sit and use a crock pot to keep warm if needed. This recipe is great to use on salads, as a dip, as a soup base, in Mexican layer casserole using tortilla or corn shells as one layer and low fat cheeseas the second layer baked for 45 min. I love to use it on Taco Salads! This also makes a great gift to put in jars and give as gifts especially at Christmas when you need several gifts at once. Adapt and enjoy!!
