2/3 call purpose flour

1 env.italian dressing mix, dry

1 env.ranch dressing mix, dry
-
1 1/4 cmayonnaise, fat-free
-
1/2 tsplemon zest, grated
-
1/4 tsppepper
-
3 Tbspwater
-
1 1/2 citalian bread crumbs
-
1/3 cparmesan cheese
-
4 lbchicken pieces of choice (i use breasts & thighs)

mashed potatoes & gravy
How To Make italian ranch oven "fried" chicken

1Preheat oven to 375 degrees F. Line a rimmed baking sheet with foil & coat with cooking spray. In a large ziplock bag combine flour, 2 tsp italian dressing mix & 2 tsp ranch dressing mix; mix well & set aside.

2In a large bowl, stir together mayo, lemon, pepper & water; mix until smooth. In another bowl, stir bread crumbs, cheese & remaining dressing mixes; mix well.

3Place chicken pieces, a few at a time, in ziplock bag with flour/dressing mixture. Seal bag; shake to coat chicken. Taking 1 piece at a time, take chicken shaking off excess & dip into mayo mixture; turn to coat; then in bread crumbs/dressing mixture, coating completely. Place skin side down on baking sheet. Repeat with remaining chicken pieces. Spray all chicken with cooking spray. Bake 50 - 55 minutes. Serve with mashed potatoes & gravy!
