Ingredients For italian ranch oven "fried" chicken

  • 2/3 c
    all purpose flour
  • 1 env.
    italian dressing mix, dry
  • 1 env.
    ranch dressing mix, dry
  • 1 1/4 c
    mayonnaise, fat-free
  • 1/2 tsp
    lemon zest, grated
  • 1/4 tsp
    pepper
  • 3 Tbsp
    water
  • 1 1/2 c
    italian bread crumbs
  • 1/3 c
    parmesan cheese
  • 4 lb
    chicken pieces of choice (i use breasts & thighs)
  • SERVE WITH (OPTIONAL):
  • mashed potatoes & gravy

How To Make italian ranch oven "fried" chicken

    Preheat oven to 375 degrees F. Line a rimmed baking sheet with foil & coat with cooking spray. In a large ziplock bag combine flour, 2 tsp italian dressing mix & 2 tsp ranch dressing mix; mix well & set aside.

    In a large bowl, stir together mayo, lemon, pepper & water; mix until smooth. In another bowl, stir bread crumbs, cheese & remaining dressing mixes; mix well.

    Place chicken pieces, a few at a time, in ziplock bag with flour/dressing mixture. Seal bag; shake to coat chicken. Taking 1 piece at a time, take chicken shaking off excess & dip into mayo mixture; turn to coat; then in bread crumbs/dressing mixture, coating completely. Place skin side down on baking sheet. Repeat with remaining chicken pieces. Spray all chicken with cooking spray. Bake 50 - 55 minutes. Serve with mashed potatoes & gravy!
